No-Bake Mini Banana

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the filling:

  • 2 medium ripe bananas, sliced
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (or whipped topping)

For the topping:

  • Extra sliced bananas
  • Whipped cream
  • Chocolate shavings (optional)

Instructions:

  1. Prepare the crust:
  • In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  • Press the mixture firmly into the bottom of mini pie tins or cupcake liners to form a crust.
  1. Make the filling:
  • In another bowl, whisk together the instant vanilla pudding mix and milk until it thickens, about 2 minutes.
  • Stir in the vanilla extract and whipped cream until combined.
  1. Layer the filling:
  • Place a layer of banana slices in each mini crust.
  • Spoon the pudding mixture over the bananas, filling the crust to the top.
  1. Chill:
  • Refrigerate the mini pies for at least 2 hours to set.
  1. Serve:
  • Before serving, top with additional banana slices and whipped cream. Optionally, add chocolate shavings for a delightful twist.
