Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- ½ cup (60g) all-purpose flour
- 2 large eggs
- 1 cup (100g) Panko breadcrumbs
- ½ cup (50g) grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper, to taste
- 3–4 tbsp olive oil or butter for frying
For the Parmesan Mushroom Sauce:
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 8 oz (225g) cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- ½ cup (50g) grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Optional: Fresh parsley or thyme for garnish
Instructions
1. Prepare the Chicken:
- Pound the chicken breasts to an even thickness using a meat mallet.
- Set up a breading station with three shallow bowls:
- Bowl 1: Flour, seasoned with salt and pepper.
- Bowl 2: Beaten eggs.
- Bowl 3: Panko breadcrumbs, Parmesan cheese, garlic powder, and paprika.
- Dredge each chicken breast in the flour, then dip into the egg, and finally coat in the breadcrumb mixture.
2. Cook the Chicken:

- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 2–3 minutes.
- Reduce the heat to low and stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently until the sauce thickens, about 3–5 minutes.
- Season with salt and black pepper to taste.
4. Assemble and Serve:
- Place the crispy chicken on serving plates or a platter.
- Spoon the Parmesan mushroom sauce generously over the chicken.
- Garnish with fresh parsley or thyme if desired.
