Ingredients:
- For the crust:
- 200g (7 oz) crushed biscuits (such as graham crackers)
- 100g (7 tbsp) melted butter
- For the filling:
- 500g (18 oz) cream cheese, softened
- 200g (1 cup) sugar
- 3 eggs
- 200ml (¾ cup) heavy cream
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions:
- Prepare the crust:
- Preheat the oven to 170°C (340°F).
- Mix the crushed biscuits with melted butter.
- Press the mixture into the bottom of a springform pan and refrigerate while preparing the filling.
- Prepare the filling:
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the heavy cream, vanilla extract, and lemon juice.
- Sift in the cornstarch and mix until fully combined.
- Bake the cheesecake:
- Pour the mixture over the prepared crust.
- Bake for about 50-60 minutes or until the center is set.
- Let it cool in the oven with the door slightly open for an hour.
- Chill and serve:
- Refrigerate for at least 4 hours or overnight.
- Dust with powdered sugar if desired.
