Creamy Baked Cheesecake

Ingredients:

  • For the crust:
    • 200g (7 oz) crushed biscuits (such as graham crackers)
    • 100g (7 tbsp) melted butter
  • For the filling:
    • 500g (18 oz) cream cheese, softened
    • 200g (1 cup) sugar
    • 3 eggs
    • 200ml (¾ cup) heavy cream
    • 2 tbsp cornstarch
    • 1 tsp vanilla extract
    • 1 tbsp lemon juice

Instructions:

  1. Prepare the crust:
    • Preheat the oven to 170°C (340°F).
    • Mix the crushed biscuits with melted butter.
    • Press the mixture into the bottom of a springform pan and refrigerate while preparing the filling.
  2. Prepare the filling:
    • In a mixing bowl, beat the cream cheese and sugar until smooth.
    • Add eggs one at a time, mixing well after each addition.
    • Stir in the heavy cream, vanilla extract, and lemon juice.
    • Sift in the cornstarch and mix until fully combined.
  3. Bake the cheesecake:
    • Pour the mixture over the prepared crust.
    • Bake for about 50-60 minutes or until the center is set.
    • Let it cool in the oven with the door slightly open for an hour.
  4. Chill and serve:
    • Refrigerate for at least 4 hours or overnight.
    • Dust with powdered sugar if desired.
    • Slice and enjoy!
