Golden Crispy Chicken with Parmesan Mushroom Sauce

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • ½ cup (60g) all-purpose flour
  • 2 large eggs
  • 1 cup (100g) Panko breadcrumbs
  • ½ cup (50g) grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 3–4 tbsp olive oil or butter for frying

For the Parmesan Mushroom Sauce:

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Optional: Fresh parsley or thyme for garnish

Instructions

1. Prepare the Chicken:

  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. Set up a breading station with three shallow bowls:
    • Bowl 1: Flour, seasoned with salt and pepper.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Panko breadcrumbs, Parmesan cheese, garlic powder, and paprika.
  3. Dredge each chicken breast in the flour, then dip into the egg, and finally coat in the breadcrumb mixture.

2. Cook the Chicken:

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Fry the chicken breasts for 3–4 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C).
  3. Transfer to a plate and cover loosely with foil to keep warm.

3. Make the Parmesan Mushroom Sauce:

  1. In the same skillet, melt butter with olive oil over medium heat.
  2. Add the sliced mushrooms and sauté for 4–5 minutes until golden and softened.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 2–3 minutes.
  5. Reduce the heat to low and stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently until the sauce thickens, about 3–5 minutes.
  6. Season with salt and black pepper to taste.

4. Assemble and Serve:

  1. Place the crispy chicken on serving plates or a platter.
  2. Spoon the Parmesan mushroom sauce generously over the chicken.
  3. Garnish with fresh parsley or thyme if desired.

5. Optional Serving Suggestions:

  • Pair with mashed potatoes, pasta, or roasted vegetables to complete the meal.
