Hearty Pre-Paycheck Stew

Ingredients :

– 1 onion, diced
– 2 carrots, peeled and sliced
– 2 celery stalks, diced
– 2 cloves of garlic, minced
– 2 potatoes, peeled and diced
– 1 can of diced tomatoes (14.5 ounces)
– 1 can of beans (such as kidney beans or black beans), drained and rinsed
– 4 cups of vegetable or chicken broth
– 1 teaspoon of dried thyme
– 1 teaspoon of dried rosemary
– Salt and pepper to taste
– Olive oil for sautéing
– Optional: chopped fresh parsley for garnish

Préparations :

  1. Sauté the Aromatics:
    – In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
    – Add the diced onion, carrots, and celery to the pot. Sauté until the vegetables are softened and the onions are translucent, about 5-7 minutes.
    – Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the Potatoes and Tomatoes:
    – Add the diced potatoes to the pot, followed by the can of diced tomatoes (with their juices). Stir to combine all the ingredients.
  3. Incorporate the Beans and Broth:
