Instructions:
- Cook the Vermicelli: Follow the package instructions to cook the vermicelli noodles. Drain and set aside.
- Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the minced garlic and chopped onion. Sauté until fragrant and translucent, about 2-3 minutes.
- Add Vegetables: If using bell pepper, add it to the skillet and cook for an additional 2-3 minutes until slightly tender.
- Make the Sauce: Return the cooked chicken to the skillet. Pour in the chicken broth, soy sauce, fish sauce (if using), lemon juice, lemon zest, and sugar. Stir well and let the mixture simmer for 3-4 minutes.
- Combine with Noodles: Add the cooked vermicelli noodles to the skillet. Toss everything together until the noodles are well coated with the sauce and heated through.
- Season and Garnish: Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh cilantro or parsley, and sliced green onions if desired.
