Ingredients
- 1 whole chicken (cut into pieces) or 4 chicken breasts
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, thinly sliced
- 4 cloves of garlic, chopped
- 6 cups chicken broth
- 1 cup noodles (as desired)
- 2 celery stalks, thinly sliced
- 1 bay leaf
- Salt and black pepper to taste
- 1 teaspoon dried thyme or fresh herbs such as parsley or dill (optional)
Method:
- Prepare the chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on both sides until golden. Then remove the chicken from the pot and set aside.
- Prepare the vegetables: In the same pot, add the onions, carrots, celery, and garlic. Stir until the vegetables are tender and the onions are translucent.
- Add the stock: Return the chicken to the pot and add the chicken stock, bay leaf, and thyme. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Cook the noodles: Remove the chicken from the pot and cut into small pieces. Return the chicken to the pot and add the noodles. Cook the soup until the noodles are cooked through, about 10 minutes.
- Seasoning: Season the soup with salt and pepper to taste. If using fresh herbs, add them now.
- Serving: Serve the soup hot and enjoy.
