Apple Crisp Bites

★Ingredients

For the apple filling:

1/4 cup granulated sugar

4 medium apples (Granny Smith or Honeycrisp work well), peeled, cored, and diced

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon lemon juice

For the crisp topping:

1/2 cup old-fashioned rolled oats

1/2 cup packed brown sugar

1/2 cup all-purpose flour

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cut into small cubes

★Instructions

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it well.
  1. Prepare the Apple Filling:
  • In a large bowl, combine the diced apples, granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss until the apples are evenly coated.
  1. Make the Crisp Topping:
  • In another bowl, mix together the flour, rolled oats, brown sugar, ground cinnamon, ground nutmeg, and salt.
  • Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the mixture until it resembles coarse crumbs.
  1. Assemble the Bites:
  • Spoon about a tablespoon of the apple filling into each mini muffin cup.
  • Sprinkle the crisp topping generously over the apples in each cup, pressing down slightly to adhere.
  1. Bake:
  • Bake in the preheated oven for 18-22 minutes, or until the topping is golden brown and the apples are tender.
  1. Cool and Serve:
  • Allow the apple crisp bites to cool in the muffin tin for about 10 minutes before transferring them to a wire rack to cool completely.

Optional:

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
