1 tablespoon lemon juice
For the crisp topping:
1/2 cup old-fashioned rolled oats
1/2 cup packed brown sugar
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small cubes
★Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it well.
- Prepare the Apple Filling:
- In a large bowl, combine the diced apples, granulated sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss until the apples are evenly coated.
- Make the Crisp Topping:
- In another bowl, mix together the flour, rolled oats, brown sugar, ground cinnamon, ground nutmeg, and salt.
- Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the mixture until it resembles coarse crumbs.
- Assemble the Bites:
- Spoon about a tablespoon of the apple filling into each mini muffin cup.
- Sprinkle the crisp topping generously over the apples in each cup, pressing down slightly to adhere.
- Bake:
- Bake in the preheated oven for 18-22 minutes, or until the topping is golden brown and the apples are tender.
- Cool and Serve:
- Allow the apple crisp bites to cool in the muffin tin for about 10 minutes before transferring them to a wire rack to cool completely.
